Mediterranean Ground Beef Stir Fry

Ingredients:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • 1 tsp oregano
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt & pepper, to taste
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • Juice of ½ lemon

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté for 1-2 minutes until fragrant.
  3. Add ground beef, breaking it up with a spatula, and cook until browned. Drain excess fat if needed.
  4. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5-7 minutes until veggies are tender.
  5. Add olives, oregano, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
  6. Remove from heat and mix in feta cheese and parsley.
  7. Squeeze fresh lemon juice on top before serving.
