Ingredients:
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, sliced
- 1 tsp oregano
- ½ tsp cumin
- ½ tsp paprika
- Salt & pepper, to taste
- ¼ cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- Juice of ½ lemon
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté for 1-2 minutes until fragrant.
- Add ground beef, breaking it up with a spatula, and cook until browned. Drain excess fat if needed.
- Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5-7 minutes until veggies are tender.
- Add olives, oregano, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
- Remove from heat and mix in feta cheese and parsley.
- Squeeze fresh lemon juice on top before serving.
