Crispy Mashed Potato Cakes Recipe
These crispy mashed potato cakes are a delicious way to use up leftover mashed potatoes! They are golden brown on the outside and creamy on the inside.
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour (or breadcrumbs)
- 1 large egg, beaten
- 2 tablespoons chopped green onions (or chives)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter (or oil) for frying
Instructions:
Prepare the Mixture:
- In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, flour, beaten egg, green onions, garlic powder, onion powder, salt, and pepper.
- Mix until well combined. If the mixture is too soft, add more flour or breadcrumbs.
Form the Cakes:
- Scoop about 2 tablespoons of the mixture and shape it into a small patty.
- Repeat with the remaining mixture, placing the cakes on a plate.
Heat the Pan:
- Heat a non-stick skillet or cast-iron pan over medium heat and add butter or oil.
Cook the Potato Cakes:
- Place the potato cakes in the pan without overcrowding.
- Cook for 3-4 minutes per side, until golden brown and crispy.
- Flip carefully and cook the other side.
Serve:
- Remove the cakes from the pan and drain on a paper towel.
- Serve warm with sour cream, Greek yogurt, or a dipping sauce of your choice.
Tips:
✔ If your mashed potatoes are very soft, chill the mixture for 30 minutes before forming the cakes.
