Here is a recipe for Cookies and Gravy Casserole with Sausage:
Ingredients:
- 1 pound bulk breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped green onions
- 1/2 cup chopped fresh parsley
- 2 cups crumbled buttermilk biscuits
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled cooked bacon
- 2 tablespoons chopped fresh chives
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cook the sausage in a skillet over medium-high heat until browned and cooked through, breaking it up into small pieces with a spatula as it cooks.
- Remove the cooked sausage from the skillet using a slotted spoon and set it aside on a plate.
- In the same skillet, add the flour and whisk it into the sausage drippings over medium heat. Cook for 1-2 minutes, stirring constantly.
- Slowly add the milk to the skillet, whisking constantly to prevent lumps from forming. Cook for 5-7 minutes, or until the gravy has thickened and coats the back of a spoon.
- Season the gravy with salt and pepper.
- Stir in the green onions and parsley, then fold in the cooked sausage.
- Pour the sausage gravy into the prepared baking dish.
- In a separate bowl, mix together the crumbled biscuits, cheddar cheese, and crumbled bacon.
- Sprinkle the biscuit mixture evenly over the top of the sausage gravy in the baking dish.
- Bake for 25-30 minutes, or until the biscuit topping is golden brown and the gravy is bubbly.
- Let the casserole cool for a few minutes before sprinkling chopped chives on top and serving.
