Cookies and Gravy Casserole with Sausage

Here is a recipe for Cookies and Gravy Casserole with Sausage:


  • 1 pound bulk breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh parsley
  • 2 cups crumbled buttermilk biscuits
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked bacon
  • 2 tablespoons chopped fresh chives


  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook the sausage in a skillet over medium-high heat until browned and cooked through, breaking it up into small pieces with a spatula as it cooks.
  3. Remove the cooked sausage from the skillet using a slotted spoon and set it aside on a plate.
  4. In the same skillet, add the flour and whisk it into the sausage drippings over medium heat. Cook for 1-2 minutes, stirring constantly.

  1. Slowly add the milk to the skillet, whisking constantly to prevent lumps from forming. Cook for 5-7 minutes, or until the gravy has thickened and coats the back of a spoon.
  2. Season the gravy with salt and pepper.
  3. Stir in the green onions and parsley, then fold in the cooked sausage.
  4. Pour the sausage gravy into the prepared baking dish.
  5. In a separate bowl, mix together the crumbled biscuits, cheddar cheese, and crumbled bacon.
  6. Sprinkle the biscuit mixture evenly over the top of the sausage gravy in the baking dish.

  1. Bake for 25-30 minutes, or until the biscuit topping is golden brown and the gravy is bubbly.
  2. Let the casserole cool for a few minutes before sprinkling chopped chives on top and serving.
