roasted sweet potatoes

Here’s a simple recipe for roasted sweet potatoes:

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Fresh herbs (such as parsley or rosemary) for garnish (optional)

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water to remove any dirt or debris. Pat them dry with a clean kitchen towel.
  3. Cut the sweet potatoes into evenly sized cubes or wedges. You can leave the skin on or peel them, depending on your preference.
  4. In a large bowl, toss the sweet potato pieces with olive oil, salt, pepper, and paprika (if using). Make sure all the pieces are evenly coated with the seasoning.
  5. Spread the seasoned sweet potato pieces in a single layer on a baking sheet or roasting pan. Make sure they are not overcrowded so that they can roast evenly.

  1. Place the baking sheet or pan in the preheated oven and roast for about 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized. You can flip them once halfway through cooking for even browning.
  2. Once the sweet potatoes are roasted to your liking, remove them from the oven and let them cool slightly. Garnish with fresh herbs if desired.
  3. Serve the roasted sweet potatoes as a side dish or use them as a base for other recipes like salads or grain bowls.

Enjoy your homemade roasted sweet potatoes!
