Apple Pie Filling Coffee Cake

Here’s a recipe for Apple Pie Filling Coffee Cake:


For the cake batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the apple pie filling:

  • 2 cups peeled, cored, and chopped apples (about 2 medium-sized apples)
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract


  1. Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt for the cake batter. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Begin and end with the dry ingredients, mixing just until combined.
  5. In a small saucepan, melt the butter for the apple pie filling over medium heat. Add the chopped apples, brown sugar, cinnamon, and nutmeg. Cook for about 5 minutes, stirring occasionally, until the apples are slightly softened and coated in the caramel-like sauce. Remove from heat.
  6. Spread half of the cake batter into the prepared baking pan. Top with the apple pie filling, spreading it evenly over the batter. Drop spoonfuls of the remaining cake batter over the filling.
  7. In a separate bowl, combine the ingredients for the streusel topping: flour, granulated sugar, brown sugar, and cinnamon. Add the cold cubed butter and use your fingers or a pastry cutter to mix until crumbly. Sprinkle the streusel topping evenly over the cake batter.
  8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. To make the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze over the cooled cake.

Note: You can adjust the spices and sweetness according to your taste preferences. You can also add chopped nuts or raisins to the streusel topping if desired.
