Ingredients:
- 2 cups cooked chicken, shredded or diced
- 2 cups cooked rice
- 2 cups broccoli florets, steamed or blanched
- 1 ½ cups shredded cheddar cheese
- 1 can condensed cream of chicken soup
- 1 cup sour cream
- ½ cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and translucent.
- In a medium bowl, combine the cooked chicken, cooked rice, steamed broccoli, sautéed onion and garlic mixture, dried thyme, dried oregano, salt, and pepper. Mix well.
- In another bowl, whisk together the condensed cream of chicken soup, sour cream, and milk until well combined.
- Pour the soup mixture over the chicken, rice, and broccoli mixture, and stir until everything is evenly coated.
- Spread half of the mixture into the greased baking dish.
- Sprinkle half of the shredded cheddar cheese on top. Repeat with the remaining mixture and cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and continue baking for another 10-15 minutes or until the cheese is melted and bubbly and the casserole is heated through.
- Once cooked, remove from the oven and let it cool for a few minutes before serving.
