Mexican Street Corn

Mexican Street Corn, also known as Elote, is a popular and delicious dish. Here’s a recipe to help you prepare it:

Ingredients:

  • 4 ears of corn
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup crumbled Cotija cheese (or feta cheese)
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste
  • Lime wedges (for serving)

Instructions:

  1. Preheat your grill to medium-high heat. Alternatively, you can also use a stovetop grill pan or broiler.
  2. Husk the corn, removing the outer layers and silks. Leave the husk attached to use as a handle while grilling, or remove it if you prefer.
  3. Grill the corn over medium-high heat, turning occasionally, until the kernels are charred and cooked through. This usually takes about 10-12 minutes. If using a stovetop grill pan, heat it over medium-high heat and grill the corn in batches.
  4. In a small bowl, combine the mayonnaise, sour cream, minced garlic, lime juice, and a pinch of salt and pepper. Mix well to make the sauce.
  5. Once the corn is grilled, brush each ear with the sauce mixture, using a basting brush or a spoon to coat the kernels evenly.

  1. Sprinkle the crumbled Cotija cheese (or feta cheese) over the corn, making sure it sticks to the sauce.
  2. Dust the corn with chili powder, evenly distributing it over each ear.
  3. Garnish with fresh chopped cilantro.
  4. Serve the Mexican Street Corn hot with lime wedges on the side. Squeezing lime juice over the corn before eating adds a tangy flavor.
