Mexican Street Corn, also known as Elote, is a popular and delicious dish. Here’s a recipe to help you prepare it:
Ingredients:
- 4 ears of corn
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup crumbled Cotija cheese (or feta cheese)
- 1 teaspoon chili powder
- 1 clove garlic, minced
- 1 tablespoon lime juice
- Fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
- Lime wedges (for serving)
Instructions:
- Preheat your grill to medium-high heat. Alternatively, you can also use a stovetop grill pan or broiler.
- Husk the corn, removing the outer layers and silks. Leave the husk attached to use as a handle while grilling, or remove it if you prefer.
- Grill the corn over medium-high heat, turning occasionally, until the kernels are charred and cooked through. This usually takes about 10-12 minutes. If using a stovetop grill pan, heat it over medium-high heat and grill the corn in batches.
- In a small bowl, combine the mayonnaise, sour cream, minced garlic, lime juice, and a pinch of salt and pepper. Mix well to make the sauce.
- Once the corn is grilled, brush each ear with the sauce mixture, using a basting brush or a spoon to coat the kernels evenly.
- Sprinkle the crumbled Cotija cheese (or feta cheese) over the corn, making sure it sticks to the sauce.
- Dust the corn with chili powder, evenly distributing it over each ear.
- Garnish with fresh chopped cilantro.
- Serve the Mexican Street Corn hot with lime wedges on the side. Squeezing lime juice over the corn before eating adds a tangy flavor.
Enjoy your delicious Mexican Street Corn!
