Pasta Salad

  • 8 ounces (225g) pasta (rotini, penne, or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


  1. Cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, black olives, feta cheese, basil, and parsley.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper. Adjust the seasoning to taste.
  4. Add the cooked and cooled pasta to the large bowl with the vegetables and cheese.
  5. Pour the dressing over the pasta and vegetables. Toss gently to combine, ensuring all ingredients are coated with the dressing.

  1. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
  2. Before serving, give the pasta salad a quick toss to redistribute the dressing. Taste and adjust the seasoning if needed.
