MEATLOAF IN A MUFFIN PAN

Preparing meatloaf in a muffin pan is a fun and convenient way to serve individual portions. Here’s a recipe to guide you through the process:

Ingredients:

  • 1 ½ pounds ground beef
  • 1 small onion, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • ⅓ cup milk
  • 1 egg, beaten
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Cooking spray or oil for greasing the muffin pan

For the glaze:

  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, onion, bell pepper, garlic, breadcrumbs, milk, egg, Worcestershire sauce, ketchup, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  3. Lightly grease the cups of a muffin pan with cooking spray or oil to prevent sticking.
  4. Divide the meat mixture evenly among the cups of the muffin pan, pressing it down gently to pack it together.
  5. In a small bowl, whisk together the ketchup, brown sugar, and mustard to make the glaze.
  6. Spoon a small amount of the glaze mixture over each meatloaf cup, spreading it evenly.

  1. Place the muffin pan in the preheated oven and bake for about 25-30 minutes or until the meatloaves are cooked through and browned on top. To check for doneness, you can insert a meat thermometer into the center of a meatloaf muffin; it should read 160°F (71°C).
  2. Once cooked, remove the meatloaf muffins from the oven and allow them to cool in the pan for a few minutes.
  3. To serve, carefully remove the meatloaf muffins from the pan and transfer them to a serving platter. You can garnish them with additional ketchup or your preferred sauce, if desired.

These meatloaf muffins are delicious served hot, but they also make great leftovers for lunches or quick meals.
