Orange Cranberry Bread is a delicious and tangy treat that can be enjoyed for breakfast or as a snack. Here’s a recipe to help you prepare it:
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon orange zest
- 3/4 cup orange juice (freshly squeezed if possible)
- 2 tablespoons vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries, coarsely chopped
- Optional: 1/2 cup chopped nuts (such as walnuts or pecans)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with cooking spray or butter, and lightly flour it to prevent sticking.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest. Make sure to mix them well to evenly distribute the ingredients.
- In a separate bowl, combine the orange juice, vegetable oil, egg, and vanilla extract. Whisk until the wet ingredients are well blended.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the chopped cranberries and nuts (if using). Again, avoid overmixing to prevent a dense texture.
- Pour the batter into the prepared loaf pan, spreading it evenly. Tap the pan gently on the counter to release any air bubbles.
- Place the loaf pan in the preheated oven and bake for about 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. The top should be golden brown.
- Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.
- Once the bread is completely cooled, you can slice it and enjoy!
This Orange Cranberry Bread can be stored in an airtight container at room temperature for a few days. It also freezes well if you want to save some for later.
Note: You can adjust the sweetness of the bread by reducing or increasing the amount of sugar according to your preference. Additionally, if you prefer a stronger orange flavor, you can add more orange zest to the recipe.
