Mashed potato puffs

To prepare mashed potato puffs, you will need the following ingredients:


  • 4 cups mashed potatoes
  • 1 cup grated cheddar cheese
  • 1/2 cup cooked and crumbled bacon (optional)
  • 1/4 cup finely chopped green onions (optional)
  • 2 large eggs, beaten

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with cupcake liners.
  2. In a large bowl, combine the mashed potatoes, grated cheddar cheese, crumbled bacon, and chopped green onions. Mix them well until all the ingredients are evenly distributed.
  3. In a separate bowl, whisk the beaten eggs. Add the eggs to the potato mixture and mix until everything is combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Add this dry mixture to the potato mixture and stir until just combined. Be careful not to overmix.

  1. Scoop the potato mixture into the prepared muffin tin, filling each cup to about three-quarters full.
  2. Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the potato puffs are golden brown on top and set in the center.
  3. Once cooked, remove the potato puffs from the oven and let them cool in the muffin tin for a few minutes. Then, transfer them to a wire rack to cool completely.
  4. Serve the mashed potato puffs as a side dish or appetizer. They can be enjoyed hot or at room temperature.
