  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 2 eggs, beaten
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 teaspoon vanilla extract

For the icing:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 1 can (5 ounces) evaporated milk

  5. Remove the saucepan from the heat and stir in the vanilla extract and shredded coconut.

  1. When the cake is done, remove it from the oven and let it cool for a few minutes.
