Blueberry Cream Cheese Loaf

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 4 oz cream cheese, at room temperature
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease a 9×5 inch (23×13 cm) loaf pan with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Then add the vanilla extract.

  1. Gradually add the flour mixture to the butter mixture in three parts, alternating with the buttermilk in two parts, beginning and ending with the flour mixture. Mix until just combined.
  2. In a small bowl, mix the cream cheese and powdered sugar until smooth.
  3. Gently fold the blueberries into the batter, being careful not to crush them.
  4. Pour half of the batter into the prepared loaf pan. Spoon the cream cheese mixture on top of the batter, and then add the remaining batter on top.

  1. Bake for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  2. Remove from the oven and let the loaf cool in the pan for 10 minutes. Then remove from the pan and transfer to a wire rack to cool completely.
  3. Slice and serve your delicious Blueberry Cream Cheese Loaf! Enjoy!
