Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 4 oz cream cheese, at room temperature
- 1/4 cup powdered sugar
- 1 cup fresh blueberries
Instructions:
- Preheat your oven to 350°F (180°C) and grease a 9×5 inch (23×13 cm) loaf pan with non-stick cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat together the butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs, one at a time, beating well after each addition. Then add the vanilla extract.
- Gradually add the flour mixture to the butter mixture in three parts, alternating with the buttermilk in two parts, beginning and ending with the flour mixture. Mix until just combined.
- In a small bowl, mix the cream cheese and powdered sugar until smooth.
- Gently fold the blueberries into the batter, being careful not to crush them.
- Pour half of the batter into the prepared loaf pan. Spoon the cream cheese mixture on top of the batter, and then add the remaining batter on top.
- Bake for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
- Remove from the oven and let the loaf cool in the pan for 10 minutes. Then remove from the pan and transfer to a wire rack to cool completely.
