Italian Lemon Pound Cake

Italian Lemon Pound Cake is a delicious dessert that is easy to prepare. Here is a recipe to make a moist and flavorful lemon pound cake that will be perfect for any occasion.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/4 cup fresh lemon juice
  • 1 tablespoon grated lemon zest
  • 1/2 cup buttermilk, at room temperature

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Mix in the lemon juice and lemon zest.
  6. Add in the flour mixture in three parts, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
  4. Serve and enjoy!

Optional: You can make a lemon glaze to drizzle over the cake. Mix 1 cup of powdered sugar with 2 tablespoons of lemon juice until smooth. Drizzle over the cooled cake.
