Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup hot water
- 3/4 cup unsalted butter
- 1 1/2 cups granulated sugar
- 1 1/2 cups evaporated milk
- 4 large egg yolks
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 cups sweetened shredded coconut
- 1 1/2 cups chopped pecans
Instructions:
- Preheat the oven to 350°F (180°C). Grease and flour two 9-inch (23cm) round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In a separate mixing bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined. Stir in the hot water, mixing until the batter is smooth and well combined.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center of each cake comes out clean.
- While the cakes are baking, prepare the frosting. In a medium saucepan, melt the butter over medium heat. Stir in the sugar, evaporated milk, egg yolks, and salt. Cook, stirring constantly, until the mixture has thickened and coats the back of a spoon, about 12-15 minutes.
- Remove the frosting from the heat and stir in the vanilla extract, coconut, and pecans.
- Once the cakes are done, remove them from the oven and let them cool in the pans for 5-10 minutes. Then, transfer the cakes to a wire rack to cool completely.
- Once the cakes have cooled, place one cake layer on a serving platter or cake stand. Spread a layer of frosting over the top of the cake. Place the second cake layer on top and frost the top and sides of the cake.
