The Easiest eclair cake!

Ingredients:

  • 2 (3.4 oz) packages of instant vanilla pudding mix
  • 3 cups of milk
  • 1 (8 oz) container of whipped topping
  • 1 (14 oz) package of graham crackers
  • 1 can of chocolate frosting

Instructions:

  1. In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth.
  2. Fold in the whipped topping until well combined.
  3. In a 9×13 inch baking dish, arrange a single layer of graham crackers, breaking them into smaller pieces if necessary to fit.
  4. Spread half of the pudding mixture on top of the graham crackers.
  5. Place another layer of graham crackers on top of the pudding mixture, followed by the remaining pudding mixture.
  6. Add a final layer of graham crackers on top.

  1. Microwave the can of chocolate frosting for 30 seconds to soften it, then spread it evenly over the top layer of graham crackers.
  2. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften and the pudding mixture to set.
  3. Before serving, slice into squares and enjoy!

Note: For an extra decadent touch, you can also sprinkle chopped nuts or mini chocolate chips on top of the chocolate frosting layer.
