  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cans kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 1/4 cup chili powder
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup beef broth
  • Shredded cheddar cheese and sour cream, for serving (optional)

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot and cook for 3-4 minutes, until the onion is softened.
  3. Add the drained and rinsed kidney beans, pinto beans, and black beans to the pot, along with the diced tomatoes, tomato sauce, chili powder, cumin, oregano, smoked paprika, salt, black pepper, and cayenne pepper (if using). Stir to combine.

  1. Add the beef broth to the pot and stir to combine. Bring the chili to a simmer.
  2. Reduce the heat to low and simmer the chili for at least 30 minutes, stirring occasionally. The longer the chili simmers, the more the flavors will meld together.
  3. Serve the chili hot, topped with shredded cheddar cheese and a dollop of sour cream, if desired.
