Chicken and dumplings

Chicken and dumplings is a classic comfort food dish that is perfect for chilly evenings. Here is a simple recipe to prepare it:

  • 4 bone-in chicken thighs
  • 4 cups chicken broth
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • Salt and pepper to taste
  • Chopped parsley for garnish

  1. In a large pot, bring the chicken thighs and chicken broth to a boil over medium-high heat. Reduce the heat to low and let the chicken simmer for about 30 minutes or until cooked through.
  2. Remove the chicken from the pot and let it cool. Once cool enough to handle, remove the bones and shred the meat.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Add in the milk and stir until just combined.
  4. In a separate pot, melt the butter over medium heat. Add in the onion and garlic and cook until the onion is translucent, about 5 minutes.

  1. Add the frozen mixed vegetables to the pot and cook for another 5 minutes or until they are heated through.
  2. Pour in the chicken broth and bring to a simmer.
  3. Drop spoonfuls of the dumpling mixture into the pot. Cover the pot and let the dumplings cook for 10-15 minutes or until they are cooked through.
  4. Add the shredded chicken to the pot and stir to combine. Season with salt and pepper to taste.
  5. Garnish with chopped parsley and serve hot.

Enjoy your delicious chicken and dumplings!
