Chicken and dumplings is a classic comfort food dish that is perfect for chilly evenings. Here is a simple recipe to prepare it:
Ingredients:
- 4 bone-in chicken thighs
- 4 cups chicken broth
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups frozen mixed vegetables
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
- In a large pot, bring the chicken thighs and chicken broth to a boil over medium-high heat. Reduce the heat to low and let the chicken simmer for about 30 minutes or until cooked through.
- Remove the chicken from the pot and let it cool. Once cool enough to handle, remove the bones and shred the meat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Add in the milk and stir until just combined.
- In a separate pot, melt the butter over medium heat. Add in the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the frozen mixed vegetables to the pot and cook for another 5 minutes or until they are heated through.
- Pour in the chicken broth and bring to a simmer.
- Drop spoonfuls of the dumpling mixture into the pot. Cover the pot and let the dumplings cook for 10-15 minutes or until they are cooked through.
- Add the shredded chicken to the pot and stir to combine. Season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot.
Enjoy your delicious chicken and dumplings!
