  • 2 ribeye steaks (approximately 1 ½ to 2 inches thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Fresh thyme or rosemary sprigs (optional)
  • Salt and freshly ground black pepper to taste


  1. Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This will allow the steaks to cook more evenly.
  2. Preheat your grill, stovetop grill pan, or cast-iron skillet over medium-high heat. You want the cooking surface to be hot to achieve a nice sear on the steaks.
  3. While the grill or pan is heating up, rub the steaks with olive oil on both sides. Season the steaks generously with salt and freshly ground black pepper.
  4. Once the grill or pan is hot, carefully place the steaks on it. You should hear a sizzling sound when the steaks make contact with the hot surface. Cook the steaks for about 4-5 minutes per side for medium-rare doneness. Adjust the cooking time based on your preference for doneness: 3-4 minutes for rare, 5-6 minutes for medium, and 6-7 minutes for medium-well.
