Buttery Pecan Snowball Cookies


  • 1 cup unsalted butter, at room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup chopped pecans
  • Additional powdered sugar for rolling


  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add in the vanilla extract and mix until fully combined.
  4. In a separate mixing bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until fully combined.
  6. Fold in the chopped pecans.
  7. Using a cookie scoop or spoon, shape the dough into balls and place them on a baking sheet lined with parchment paper.

  1. Bake the cookies for 15-18 minutes or until they are lightly golden brown.
  2. Remove the cookies from the oven and let them cool for a few minutes.
  3. Once the cookies are slightly cooled, roll them in powdered sugar until they are fully coated.
  4. Place the cookies on a wire rack to cool completely.
  5. Once cooled, roll them in powdered sugar again for a second coating.
  6. Store the cookies in an airtight container at room temperature for up to 1 week.
