- 1 cup unsalted butter, at room temperature
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1 cup chopped pecans
- Additional powdered sugar for rolling
Instructions:
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Add in the vanilla extract and mix until fully combined.
- In a separate mixing bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until fully combined.
- Fold in the chopped pecans.
- Using a cookie scoop or spoon, shape the dough into balls and place them on a baking sheet lined with parchment paper.
- Bake the cookies for 15-18 minutes or until they are lightly golden brown.
- Remove the cookies from the oven and let them cool for a few minutes.
- Once the cookies are slightly cooled, roll them in powdered sugar until they are fully coated.
- Place the cookies on a wire rack to cool completely.
- Once cooled, roll them in powdered sugar again for a second coating.
- Store the cookies in an airtight container at room temperature for up to 1 week.
