Marinated beets

Marinated beets are a delicious and healthy side dish that can be prepared in advance and kept in the fridge for several days. Here’s a simple recipe for marinated beets:

Ingredients:

  • 4-5 medium-sized beets, peeled and sliced
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Fresh herbs (optional), such as parsley or thyme

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Slice the beets into thin rounds or wedges, depending on your preference.
  3. Spread the beet slices out in a single layer on a baking sheet lined with parchment paper.
  4. Drizzle the olive oil over the beets and toss to coat.
  5. Season the beets with salt and pepper to taste.
  6. Roast the beets in the preheated oven for 30-35 minutes, or until they are tender and slightly caramelized.

  1. While the beets are roasting, prepare the marinade. In a small bowl, whisk together the apple cider vinegar, honey, minced garlic, and a pinch of salt and pepper.
  2. Once the beets are done roasting, remove them from the oven and let them cool slightly.
  3. Transfer the beets to a large bowl and pour the marinade over them.
  4. Toss the beets in the marinade until they are well coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 3 days) to allow the flavors to develop.
  6. Before serving, garnish with fresh herbs, if desired.
