Carrot cake with cream cheese frosting

Carrot cake is a delicious dessert that’s perfect for any occasion. Here’s a recipe for making a classic carrot cake with cream cheese frosting:

Ingredients for Carrot Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped pecans (optional)

Ingredients for Cream Cheese Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract


  1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans or one 9×13 inch cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large mixing bowl, beat the eggs with both sugars until light and fluffy, about 2-3 minutes.
  4. Add the oil and vanilla extract to the egg mixture, and mix until well combined.
  5. Gradually add the dry ingredients to the egg mixture, mixing until just combined.

  1. Stir in the grated carrots and chopped pecans (if using) until evenly distributed.
  2. Pour the batter into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes before removing them from the pans and placing them on a wire rack to cool completely.
  4. To make the cream cheese frosting, beat the butter and cream cheese together until smooth and creamy.
  5. Gradually add the powdered sugar, one cup at a time, until the frosting is thick and spreadable.

  1. Stir in the vanilla extract until well combined.
  2. Once the cakes have cooled completely, spread the cream cheese frosting on top of one cake layer and place the other cake layer on top.
  3. Spread the remaining frosting over the top and sides of the cake.
