Buttermilk biscuits & gravy sausage

Here’s a recipe for Buttermilk Biscuits and Sausage Gravy:

Ingredients for the biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3/4 cup buttermilk

Ingredients for the sausage gravy:

  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste

Instructions for the biscuits:

  1. Preheat your oven to 425°F (218°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cold butter to the bowl and use a pastry cutter or your hands to work the butter into the flour mixture until it resembles coarse crumbs.

  1. Make a well in the center of the mixture and pour in the buttermilk. Use a wooden spoon or spatula to mix the ingredients together until a sticky dough forms.
  2. Turn the dough out onto a floured surface and knead it gently for about 1 minute. Don’t overwork the dough or the biscuits will be tough.
  3. Roll the dough out to about 1/2 inch thickness and cut out biscuits using a biscuit cutter or the rim of a drinking glass. Place the biscuits onto a baking sheet lined with parchment paper.
  4. Bake for 12-15 minutes or until the biscuits are golden brown and cooked through.

Instructions for the sausage gravy:

  1. While the biscuits are baking, cook the breakfast sausage in a large skillet over medium heat. Use a wooden spoon to break the sausage into small pieces as it cooks.
  2. Once the sausage is browned and cooked through, sprinkle the flour over the top and stir until the flour is absorbed and the mixture starts to look slightly dry.

  1. Pour in the whole milk and stir constantly until the mixture comes to a simmer and thickens. If the gravy is too thick, add more milk to thin it out. If it’s too thin, continue to simmer until it thickens to your desired consistency.
  2. Season the gravy with salt and pepper to taste.
  3. Serve the sausage gravy over the warm buttermilk biscuits.
