Ingredients:
- 4 boneless, skinless chicken breasts
- 6 slices of bacon, diced
- 2 cloves of garlic, minced
- 1 small onion, diced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, about 6-7 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add bacon and cook until crispy, about 5-7 minutes. Remove bacon from skillet and set aside.
- Add garlic and onion to the skillet and cook until softened, about 2-3 minutes.
- Pour chicken broth into the skillet and bring to a simmer. Cook until the liquid has reduced by half, about 5-7 minutes.
- Stir in heavy cream and Parmesan cheese until the cheese has melted and the sauce has thickened, about 3-4 minutes.
- Return chicken and bacon to the skillet and spoon the sauce over the chicken. Reduce the heat to low and let the chicken simmer in the sauce for 5-7 minutes, until the chicken is cooked through.
