Directions:

  1. Preheat the oven to 350°F. Grease and flour three 9-inch cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  4. Stir in the hot water until the batter is smooth.
  5. Divide the batter evenly among the prepared cake pans.

  1. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  4. To make the filling, combine the evaporated milk, sugar, egg yolks, butter, and vanilla extract in a medium saucepan.

  6. Remove the filling from the heat and stir in the coconut and chopped pecans.

  1. Let the filling cool to room temperature before using it to fill the cake.
  2. To make the frosting, cream the butter in a large mixing bowl until light and fluffy.
  3. Add the cocoa powder and powdered sugar, and mix until well combined.
  4. Slowly add the milk and vanilla extract, and beat until the frosting is smooth and creamy.
  5. To assemble the cake, place one cake layer on a cake plate or stand.
  6. Spread about 1/2 cup of the filling over the cake layer.
  7. Repeat with the remaining cake layers and filling.

  1. Once the cake is assembled, spread the frosting over the top and sides of the cake.
  2. Chill the cake in the refrigerator for at least 30 minutes before serving.
