Mini Cherry Cheese Danishes

Here is a recipe for Mini Cherry Cheese Danishes:

  • 1 package of frozen puff pastry (2 sheets)
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup cherry preserves or pie filling
  • 1 egg
  • 1 tablespoon water
  • Powdered sugar for dusting

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thaw the puff pastry sheets according to the package instructions.
  3. In a small mixing bowl, beat together the cream cheese, sugar, vanilla extract, and almond extract until smooth.
  4. Unfold one sheet of puff pastry onto a lightly floured surface. Use a rolling pin to gently roll out the sheet until it measures about 10×10 inches.
  5. Cut the sheet into 9 squares, about 3.3 inches each.
  6. Place about 1 tablespoon of the cream cheese mixture in the center of each square.

  1. Top each with about 1 teaspoon of cherry preserves.
  2. Fold the corners of each square up and over the filling, pinching them together to form a small pastry.
  3. Place the pastries on the prepared baking sheet, spacing them about 1 inch apart.
  4. Repeat with the second sheet of puff pastry.
  5. In a small bowl, whisk together the egg and water to make an egg wash.
  6. Brush the egg wash over the tops of the pastries.
  7. Bake for 15-18 minutes, or until the pastries are golden brown and puffed up.
  8. Remove from the oven and allow to cool on the baking sheet for a few minutes.
  9. Dust with powdered sugar before serving.
