Ingredients:
- 4 medium-sized potatoes, peeled and thinly sliced
- 1 small onion, thinly sliced
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated cheddar cheese
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, melt the butter.
- Add the sliced onions and sauté until they are soft and translucent, but not browned.
- Sprinkle the flour over the onions and stir until the flour is well combined with the butter.
- Gradually pour in the milk, stirring constantly, until the mixture is smooth.
- Add the salt and pepper, and continue to cook, stirring constantly, until the sauce thickens, about 5 minutes.
- Remove the skillet from heat.
- In a greased 9-inch (23cm) baking dish, arrange a layer of sliced potatoes, slightly overlapping each other.
- Pour half of the sauce over the potatoes, spreading it evenly.
- Add another layer of potatoes, and pour the remaining sauce over them.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- Remove the foil, sprinkle the grated cheddar cheese over the top, and return to the oven.
- Bake uncovered for another 20 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
- Let the scalloped potatoes cool for a few minutes before serving.
