Ingredients:
- 4 cups all-purpose flour
- 1/4 cup sugar
- 2 tsp. instant yeast
- 1 tsp. salt
- 3/4 cup milk
- 1/4 cup water
- 2 large eggs
- 1/4 cup unsalted butter, softened
- Vegetable oil for frying
Glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 tsp. vanilla extract
Instructions:
- In a large mixing bowl, combine the flour, sugar, yeast, and salt. Set aside.
- In a small saucepan, heat the milk and water over low heat until warm.
- In a separate bowl, beat the eggs and add the softened butter. Mix until combined.
- Add the milk mixture to the dry ingredients and mix until just combined.
- Add the egg mixture to the dough and knead until smooth and elastic, about 5 minutes.
- Cover the dough with a damp cloth and let it rise in a warm, draft-free area for 1 hour.
- Punch the dough down and roll it out to 1/2 inch thickness.
- Cut the dough into doughnuts using a doughnut cutter or two round cookie cutters.
- Place the doughnuts on a lightly floured baking sheet and cover with a damp cloth. Let them rise again for about 30 minutes.
- Heat the vegetable oil in a large pot or deep fryer to 375°F.
- Gently place the doughnuts in the hot oil, a few at a time, and fry until golden brown, about 1-2 minutes per side.
- Remove the doughnuts with a slotted spoon and drain on a paper towel.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract in a medium bowl until smooth.
- Dip each doughnut in the glaze and place on a wire rack to let excess glaze drip off.
- Let the glaze set for about 10-15 minutes before serving.
