Here’s a recipe for a delicious chocolate fudge cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Fudge Icing:
- 1/2 cup unsalted butter
- 2/3 cup unsweetened cocoa powder
- 3 cups powdered sugar
- 1/3 cup milk
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add in milk, vegetable oil, eggs, and vanilla extract, then mix everything together until well combined.
- Add in the boiling water, and mix until the batter is smooth.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Once the cake is done, remove it from the oven and let it cool in the pans for about 10 minutes.
- Then, remove the cakes from the pans and let them cool completely on a wire rack.
- To make the fudge icing, melt the butter in a medium-sized saucepan over low heat.
- Once the butter is melted, add the cocoa powder and stir until the mixture is smooth.
- Add the powdered sugar, milk, and vanilla extract, and whisk everything together until smooth and creamy.
- If the icing is too thick, add a bit more milk, one tablespoon at a time.
- Once the cake is cooled, place one layer onto a serving plate and spread a generous layer of fudge icing over it.
- Add the second cake layer on top and spread more icing over the top and sides of the cake.
- Decorate the cake with your favorite toppings and enjoy your delicious chocolate fudge cake!
