Apple Pie Enchiladas

Here’s a recipe for Apple Pie Enchiladas that serves 6-8 people:

Ingredients:

  • 2 cans of apple pie filling
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6-8 flour tortillas
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • Whipped cream or vanilla ice cream (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized mixing bowl, combine the apple pie filling, cinnamon, and nutmeg. Mix well.
  3. Spoon about 1/3 cup of the apple pie mixture into each tortilla. Roll up the tortillas and place them seam-side down in a 9×13 inch baking dish.
  4. In a medium-sized saucepan, melt the butter over medium heat. Add the brown sugar, granulated sugar, and water. Bring the mixture to a boil and stir until the sugar dissolves.

  1. Pour the butter-sugar mixture over the enchiladas, making sure to cover them evenly.
  2. Bake the enchiladas in the preheated oven for 20-25 minutes or until the enchiladas are golden brown.
  3. Remove the enchiladas from the oven and let them cool for a few minutes. Serve the enchiladas warm, topped with whipped cream or vanilla ice cream, if desired.
