  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded sweetened coconut
  • 1 teaspoon vanilla extract


  1. Preheat your oven to 350°F (180°C). Grease a 9×5 inch loaf pan with non-stick cooking spray.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy, using a handheld or stand mixer.

  1. Beat in the eggs one at a time until fully incorporated.
  2. Add the mashed bananas, crushed pineapple, shredded coconut, and vanilla extract to the bowl with the wet ingredients. Mix until well combined.
