TACO PASTA

Taco pasta is a delicious and easy-to-make dish that combines the flavors of Mexican and Italian cuisine. Here is a simple recipe to prepare taco pasta:

Ingredients:

  • 1 pound ground beef
  • 1 package (12 oz) pasta (such as rotini, penne or fusilli)
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional toppings: sour cream, chopped fresh cilantro, sliced jalapenos, diced avocado

Instructions:

  1. Cook the pasta according to package directions until it is al dente (about 8-10 minutes). Drain the pasta and set it aside.
  2. In a large skillet, cook the ground beef over medium-high heat until it is browned and cooked through, stirring occasionally.
  3. Drain any excess fat from the skillet, then add the diced tomatoes, tomato sauce, black beans, diced green chilies, and taco seasoning mix to the skillet. Stir to combine.
  4. Reduce the heat to medium-low and let the mixture simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.

  1. Add the cooked pasta to the skillet with the sauce and toss until the pasta is coated evenly with the sauce.
  2. Sprinkle the shredded cheddar cheese on top of the pasta and cover the skillet with a lid. Let the cheese melt for 2-3 minutes.
  3. Remove the skillet from the heat and let it cool for a few minutes. Then, serve the taco pasta with your desired toppings, such as sour cream, chopped fresh cilantro, sliced jalapenos, and diced avocado.
