+To prepare the Oreo crust:
°24 Oreo cookies
°1/4 c unsalted butter
+For chocolate cheesecake Fill:
°16 ounces bittersweet chocolate, grated
°2 lbs cream cheese, at room temperature
°1 1/2 cups powdered sugar
°3 tablespoons of cocoa powder
°3/4 cup heavy cream
Preheat oven 325°F (160°C).
To make an Oreo crust, place Oreo cookies in a food processor and blend until finely ground. Add the melted butter and mix again until well combined.
Press Oreo mixture into bottom and up sides of a 9-inch baking pan. Using bottom of a measuring c to press crust firmly to the pan.
In a heatproof bowl, melt bittersweet chocolate in the microwave or over a double boiler. Set aside to cool slightly.
In a large bowl, whisk the cream cheese until smooth and creamy. Add the powdered sugar and cocoa powder and whisk until the mixture is homogeneous.
Adding eggs, one at a time, beat well after every addition.
Adding melted chocolate also heavy cream and mix to well combined.
Pour the chocolate cheesecake mixture into the prepared Oreo dough.
Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly wobbly in the center.
We take it out of the oven and let it cool to room temperature.
Chill cheesecake in refrigerator for at least 4 h, or overnight.
When ready to serve, run knife around the edge of cheesecake to loosen it from pan. Remove the sides of the spring die.
Slice into slices and serve chilled, garnished with Oreo cookies or whipped cream, if desired.
