Broccoli Poolside Salad

°5 broccoli cups cut into flowers
°1 apple, seeded and cut into cubes
°1 pear, coride and cut into cubes
°1/4 c finely chop red onion
°1 cup cashew (roasted, optional)
°1 cup cranberry dried
°1/2 cup mayonnaise
°1/2 cup Greek yogurt
°2 tbsp lemon juice
°3 tbsp honey
°Kosher salt and fresh ground pepper to taste
In a medium bowl, whisk together the mayonnaise and Greek yogurt, then stir in the lemon juice and honey.
Season to taste with salt and pepper.
In a large bowl, mix the broccoli flowers, apple cubes, pears, red onions, cashews and cranberries, and stir together to collect.
Pour the sauce over the broccoli mixture, then stir until evenly coated.
Serve immediately or refrigerate for at least 20 minutes, giving flavors a chance to develop and build.
