This is what we do: This will serving 6.
1. For every person, thinly slice (for 1/8 inch) 2 red potatoes & place in pie pan or on large piece foil.
2. To make 6 patties, combine 1.5 pounds 85% lean ground beef, 2 eggs, 1 1/2 tbsp. Dijon, 1 tbsp. Worcestershire sauce, 1 tbsp. salt and 1/2 tsp. pepper & 1/2 c finely chop onions. Divide to 6 one-inch-patties.
3. Top each potato dish with a patty of meat and asparagus or green beans, then sprinkle generously with seasoned salt or garlic salt and pepper. Drizzle with olive oil, especially on the potatoes.
4. Cover with foil and bake at 400 degrees for 35-45 minutes or until potatoes are tender.
