°4 large size potatoes
°1/2 cup mayonnaise
°1/2 cup sour cream
°1/2 cup shredded sharp cheddar cheese
°4 tablespoons ground stone or yellow mustard (to taste)
°1/4 cup minced chives, divided
°8 strips of thickened bacon, cooked, crispy, and chopped
°Salt and freshly crushed black pepper
In a medium bowl, whisk together mayonnaise, sour cream, and mustard until well blended. Add 3/4 of the chopped chives with a pinch of salt and pepper. whisk to mix. Add cheese and bacon (reserve some bacon for garnish). Cover the mixture and let it cool for thirty minutes.
Peel the potatoes and cut them into halves and half pieces. Cook the potatoes in salted water until the fork softens. Strain and cool slightly. Fold the cooked potatoes into the cooled sauce. Garnish with remaining chives.
