°250g Speculoos biscuits
°50g melted butter
°250g cottage cheese
°150g Fresh cheese type St Moret (or Philadelphia)
°20cl Liquid cream
°1 tbsp. lemon juice
°1 tsp. with a level cut of granulated sugar

Preheat oven to th. 6 (180°C). Line a 22 cm high-sided springform pan with removable bottom with parchment paper.
Mix the speculoos, then mix them with the melted butter until you obtain a paste. Line the bottom of the mold with the dough, pressing down well to obtain an even thickness.
Mixing cottage cheese with cream cheese, liquid cream & lemon juice. Add the sugar and the eggs one by one and whisk everything together. Pour the mixture over the dough.
Bake for 55 minutes and sprinkle with icing sugar 10 minutes before the end of cooking. Take the cheesecake out of the oven, let it cool.
Keep it cool for 12 hours. When ready to serve, unmold the cake onto a platter.
