° 6 chicken thigh or breast (skinless)
° 2 tablespoons of butter (30 g)
° 1 tablespoon oil
° 1 can crushed or diced pineapple with juice (398 ml)
° 1/2 cup of water (125ml)
° 1/2 cup of orange, peach or pineapple juice (125 ml)
° 3/4 c sugar
° 1 teaspoon of soy sauce (15 ml)
° 1 tablespoon of chicken concentrate (15 ml)
° 1/3 c apple cider
° 1 tablespoon of cornstarch (15 g) dissolved in 2 tbsp.
° tablespoon of water
Salt & pepper chicken, sear it in butter and oil. Put apart.
Sauce: Simmer all ingredients except starch, for 10 to 15 min. It will smell a little strongly of vinegar, this is normal.
Subsequently, you need to thicken with cornstarch mixed with a little water, simmer for 2-3 minutes.
Pour the sauce over the chicken and put in the oven at 350 F covered for 1h to 1h30.
Serve with good rice. This recipe is delicious and even better if prepared the day before. It takes all its flavor.
