°1 pound of red potato peelings, available or off based on preference
°1 cup 2% milk
° 2 tablespoons of low-fat cream cheese
° 1 c grated Parmesan cheese
°3 cloves garlic
° 2 tsp green onion, cut into cubes
° Salt & pepper to taste
* Methods :
Cut the potatoes into large pieces and put them in a pot of boiling water. Simmer for about 15 minutes or until potatoes split with a fork.
When potatoes are cooked, hyat milk/cream cheese, and garlic in a saucepan over medium heat until cream cheese melts and sauce begins to boil. As soon as it starts to boil, removing it from heat.
When the potatoes are cooked, drain them well and mash them, leaving larger pieces of the potato if desired.
