- 250 g of sifted or fluid flour
- 4 eggs
- 450 ml of slightly lukewarm milk
- 2 tbsp. dark rum or orange blossom, or 1/2 glass of lager
- 1 C. tablespoon of vanilla extract or 1 packet of vanilla sugar
- 2 tbsp. tablespoon of sugar
- 1 pinch of salt
- 50 g of melted butter
Recipe steps
- Melt the butter in the microwave and heat the milk slightly, which should be barely lukewarm (this avoids lumps)
- Combine the sifted flour, sugar, salt in a large bowl. You can replace 50 g of flour with cornstarch for more lightness
- Add the eggs, the melted butter, then gradually the milk, beating well with a whisk to avoid the formation of lumps
- Add beer or rum, or orange blossom water, vanilla and let stand 30 minutes before cooking
- Heat a knob of butter in the pan and lay out a ladle of dough
- Cook your pancakes on each side, that they are well browned
- As you go, set aside on a plate, covering with a sheet of aluminum foil to keep them warm and soft. You should get between 15 and 20 pancakes with an 8-inch diameter pan.
